homesteading in oregon Squash Pudding Baked in the Sun Oven / Holiday Dessert Collab

I was invited to join the Two Family Homestead Holiday Dessert Collaboration. Normally I don't make desserts, but Morgan of Gold Shaw Farms reminded me of a gluten-free, sugar-free, dairy-free squash pudding I have made a few times. So I hauled out the Sun Oven and made Squash Pudding.

Squash Pudding
(The Yeast Connection Cookbook by William G. Crook, M.D. and Marjorie Hurt Jones, R.N.)

1 small to medium butternut squash, baked
4-6 cues of Fruit Sweetener thawed or
1-1 1/2 cups pureed fresh pineapple, ripe peeled pears, seedless grapes or bananas
2-4 tablespoons oil
Dash of cinnamon or nutmeg, optional
1/4 cup pecans, in halves or pieces, optional

Split squash, discard seeds and strings/ Scoop hot quash out of shells. Add the remaining ingredients, except pecans, and puree with an electric mixer or food processor (consistency similar to mashed potatoes).

Scrape into an oiled casserole. Sprinkle with the pecans, if using. N
Bake at 350f for 30 minutes. Serve warm or cold.

Fruit Sweetener

Start with fresh, well-washed fruit and cook it down to a slightly concentrated, thickened sauce. Freeze promptly in small amounts.

Choose One:
1 fresh, ripe pineapple or
6 sweet, ripe pears or
6 golden delicious apples or
1 1/2 pounds sweet seedless grapes or
2 ripe, fragrant mangoes
